A Paddington Special, this flavour can only be made every January-February with fresh Seville oranges. I buy them by the boxful and spend days steeped in the wonderful scent of fresh orange zest. This marmalade is always handcut and home cooked in the most traditional way, which really has not changed since the 17th century when Orange marmalade was first made in England and recipes written down by Elizabeth Rainbow in 1652 and I am fortunate enough to have been sent a copy of these by an English auntie of mine.
